Why Mingqian Is Scarce

Mingqian accounts for only 15–20% of annual Longjing output. Cold spring temperatures slow growth, creating a harvest window of just ~10 days — hence "Mingqian tea, gold-like price."

Roasting: The "Ten Techniques"

Longjing's flat shape comes from traditional hand-roasting with ten techniques: grabbing,抖动 (shaking), and pressing are central. The final "hui guo" (polishing roast) develops the signature chestnut aroma.

Brewing

  • Vessel: Glass cup (to admire the leaves) or white porcelain gaiwan
  • Temperature: 75–80°C (never boiling — too hot for these tender leaves)
  • Leaf: 3g per 150ml
  • Method: Lower infusion — 1/3 water first, add leaves, fill
  • Good Mingqian: 2–3 infusions; extend time gradually

Authenticity Tips

  1. Look for the official geographic indication (168 km² protected zone)
  2. True Longjing leaves are shorter, slightly curled; fakes are flatter
  3. Authentic tea has a bean/chestnut aroma; fakes smell grassy
  4. Genuine tea is sweet after slight bitterness; fakes taste bitter throughout
